Gluten, also known as gliadin, is a protein that is found in grains, mainly wheat. Modernization of our food also means manipulation of authentic seeds. It is safe to say that wheat and grains of modern times have multiple times more gluten than ancestral seeds, which puts a burden on our digestion until we become intolerant to it and some damage to our gut is done. Diets free of gluten altogether are therapeutic in a way that helps heal our gut and calm down our immunity. This is especially important for autoimmunity as gluten mimics certain organ tissues, confusing our immune systems all the more.
