Beetroot Salad

3 medium sized beetroot

Handful of chopped cilantro

Salt & Pepper

Juice and zest of 1/2 lemon

Olive oil to your liking


Wash and grate the beetroots on the thin side of the grater.

Zest the lemon peel on top.

Rub with salt and pepper.  Better without any gloves - we want your good bacteria to enhance our nutrition.


Plate your salad and decorate with more lemon zest and the chopped cilantro.

Pour olive oil. Serve.

Variation: You may add in a grated green apple into this salad to deepen the taste. For probiotic support, again, do not peel the apple. (Make sure it is organic)

Variation II: Don't trash your beet greens. You may chop finely and use on all your salads, supporting your liver on its detox pathways.
